For the second recipe out of
The Perfect Peach book, I choose the cover recipe - the peach galette. This one was easy to veganize - almond milk instead of regular, earth balance butter instead of regular, flax seed egg instead of regular. I made mini-hand pie versions for dessert. After a heavy dinner, we decided to each only eat half the galette - so here's the other half, for an afternoon snack (with an extra peach, of course). I added pluots, and golden cherries to the peaches for the innards. Delish!
